Joining a diverse style with a ?gdecidedly French?h culinary background and widely sought as a consultant for his restaurant expertise, Charles introduces seasonal products with a regional emphasis into a constantly evolving menu.  A love for seafood -- which meshes well with his seasonal approach to the cuisine --  and a flair for Spanish and Latin American cuisine often dominates his menus.

Rich Poliak, creator of Elements Restaurant & Enoteca, describes his commitment to socially responsible and environmentally friendly business practices:

?  At Elements we are passionate about the environment:
We will not serve bottled mineral waters, instead we are utilizing technology to filter, purify and if desired carbonate the water we offer our customers. This significantly reduces our waste as well as the energy of shipping mineral waters from around the world to our location.
We make use of the Monterey Bay Aquarium Seafood Watch, for our seafood selections. http://www.mbayaq.org/cr/seafoodwatch.asp
We use acid-free recycled paper in our Menus.
We participate in the ReCork America recycling program.
We recycle all our glass, paper and cardboard waste.
We have installed Energy Star appliances where possible & Low Flow fixtures in our Restrooms.
Our chairs and barstools are made with 98% recycled Aluminum.
Later this year we plan on applying for Bay Area Green Business Certification which will ensure that we abide by and promote environmental awareness practices.
Food Scrap Composting - Our kitchen operations are designed to generate a minimum of food waste, but some waste is inevitable. While we are committed to composting, unfortunately the City of Napa still does not have a food scrap composting program for City businesses, as it does not currently have a suitable facility for accepting food scraps or funding for a program. We are suggesting on our website that our customer let the City staff and/or Council know of their interest in getting the program going in the City of Napa. 
? At Elements we are passionate about people:
We believe that our employees deserve access to healthcare. To us, this is a basic need, but is exceedingly and unfortunately rare in the world of small restaurant and retail businesses. To make this possible we have added a small surcharge of $ 0.50 per customer to help us cover the insurance premiums for our employees. We decided to take this action rather than build the cost into the pricing of our products. We believe that this is a more transparent approach to not only ensuring we can provide healthcare access but to also let our patrons see how they are sharing in our passion and commitment for people.
? At Elements we are passionate about our community:
Living and doing business in the Napa Valley affords us with access to great foods and wines. At elements we are striving to us as many local purveyors as possible, allowing us to not only offer the best in local products, but just as important, to support our local community.
We also believe in supporting the nonprofit agencies that serve our community. As a new business, we are starting out with small but we hope meaningful support to certain agencies, and expect that support to grow as our business grows. In 2008 before the restaurant opened we made contributions to Napa Valley Hospice & Adult Day Services and participated in Auction Napa Valley?fs barrel auction. In 2009 to date we have contributed to two signature events in the Napa Valley: first was the 21st annual Napa Valley Academy Awards(TM) Gala Celebration 2009 held at the Mondavi Winery where the proceeds from the "black t-shirt" celebration went to the Care Network at the Queen of the Valley, the second event was the Dinner is Served supporting the Napa Valley Opera House League. 

We will continue to support these important organizations and in so doing demonstrate that each business has a role as an active member of making its community a better place to live.
